Our Story
Harts & Flours started with a simple conviction: that the bread on your table should taste like something someone actually cared about making. Not mass-produced. Not rushed. Just good — the kind of bread that makes you pause before you spread the butter.
We opened our doors on 3rd Street in Irwin because this town deserves a place where the sourdough has a live starter, the butter is actually European-style, and the person behind the counter knows your name. We also stock groceries — things we'd actually use in our own kitchen. If we wouldn't eat it, we won't sell it.
Everything we bake happens here, in this shop, before sunrise. That's not marketing. That's just how we do it.
What We Do
Sourdough boules with crackling crusts. Flaky croissants that shatter into buttery pieces. Focaccia rosemary, ciabatta, brioche — each one proofed slowly and baked in small batches. We also do custom orders. Tell us what you need.
We pick every item on these shelves the way we'd pick for our own kitchen. Olive oils that actually taste like olives. Pastas from the right regions. Honey, jams, spices, and the occasional thing you didn't know you needed until you tried it.
Wedding cakes that don't look like they came from a template. Birthday loaves. Bread for a dinner party where you want to impress. Call ahead, describe what you're after, and we'll make it happen. No rush fees. No minimum drama.
The Process
Flour, water, salt, and our starter — mixed the night before, left to rest while Irwin sleeps.
Stretch and folds build structure. Long cold proof in the fridge develops flavor no shortcut can match.
Shapes formed by hand, scored with intention, into a hot deck oven. Steam for crust. Heat for crumb.
Complete cooling for texture. Baked at 5 AM, on shelves by opening — always the same day.
